Hiroyuki Kanda
Born in 1963, Hiroyuki Kanda is the eldest son
in a family
who owns a Japanese restaurant
in Tokushima Prefecture.
In 2004 he opened “Japanese Cuisine Kanda”
with the concept of conveying their vision, art,
and passion through cuisine.
Since the Michelin Guide Tokyo
was
first published
in 2007,
Kanda has earned
the coveted 3-stars
for 13 consecutive years.
In 2008, together
with a group of chefs,
he founded
the NPO “FUUDO”,
which continues its mission
of looking towards
the future of food.
